New Delhi, August 30 (IANS): An eclectic mix of food enthusiasts gathered eagerly for the launch of the international paperback edition of "The Bloomsbury Handbook Of Indian Cuisine" in New Delhi. Curated by editors Sourish Bhattacharyya, Taylor Sen, and Helen Saberi, the event spotlighted Indian cuisine’s growing global influence.
The gathering was graced by notable food personalities, including Samir Bawa, Kavita Devgan, Anubhav Sapra, Pawan Soni, and Sneha Saikia. They engaged in a rich discourse on the evolving perception of Indian culinary arts, emphasizing its role in shaping India’s soft power globally.
Speakers highlighted the transformation of Indian street food’s reputation. Once avoided by foreigners due to health concerns, it is now embraced with curiosity, thanks to increased awareness. Anubhav Sapra underscored India’s diverse culinary landscape, moving beyond stereotypical dishes like "dal, paneer, and butter chicken" to showcase vibrant regional flavors.
Nutritionist Kavita Devgan pointed out a resurgence in traditional eating habits, such as millet consumption, promoting health benefits celebrated worldwide. She cited turmeric’s role in preventing Alzheimer’s, a topic now studied by Western scholars, as an example of the global recognition of India’s dietary wisdom.
The significance of documenting Indian cuisine was a consensus. Samir Bawa lamented the lack of extensive records despite India’s rich culinary diversity. He urged for better documentation to showcase it globally. Pawan Soni highlighted social media’s pivotal role in preserving and popularizing traditional recipes, even among the Indian diaspora.
