Experience the Exquisite Flavors: Meghalaya’s Culinary Cascade Festival Launches at Shillong’s Ward’s Lake
Meghalaya Chief Minister Conrad K Sangma officially launched the Culinary Cascade 2025 food festival today at Ward’s Lake in Shillong. This much-anticipated three-day event, which runs until May 3, aims to celebrate the rich culinary heritage of the northeastern state while promoting sustainable food systems.
During the opening ceremony, CM Sangma described the festival as a vibrant homage to Meghalaya’s cultural and culinary traditions. “This event highlights our rich heritage by showcasing traditional culinary practices and drawing inspiration from global cuisines, resulting in a refined fusion of local flavors with international flair,” he said.
Organized by Meghalaya’s tourism department in collaboration with Meghalayan Age Ltd, the festival operates daily from 12 p.m. to 8 p.m. Entry is free, allowing visitors to immerse themselves in the region’s indigenous ingredients and cooking techniques, paired with contemporary culinary innovations.
Sangma emphasized the event’s commitment to local production. “We take pride in our farmers and entrepreneurs, who will showcase their organic produce and artisanal products. This underscores the importance of sustainable and community-driven food systems,” he explained.
Culinary Cascade places a strong emphasis on enhancing the connection between local producers and consumers. Attendees will meet hydroponic farmers, spice cultivators, and makers of homegrown beverages, offering an authentic taste of Meghalaya’s culinary landscape.
The festival also features renowned culinary figures, including Jason White, a former chef at the Michelin-starred restaurant Noma, who will lead live cooking demonstrations alongside local celebrity chef Ahmedaki Laloo of A’origins. Food writers, culinary institute representatives, and experts in traditional cooking methods will also share their knowledge throughout the event.
Participants can explore an array of cuisines from the Khasi, Jaintia, and Garo communities, as well as locally brewed beverages and coffee. For street food enthusiasts, the festival offers indigenous delicacies like dohsnam and ktung, alongside contemporary options such as ramen, boba, and innovative baked treats.
In addition to culinary delight, the festival includes educational components. A special documentary screening will delve into the philosophy of the event, highlighting the connections between food, culture, climate awareness, and community engagement. Traditional cooking tools and vessels will also be exhibited, showcasing the region’s rich culinary history.
