Shikhadri Mahanta, an Indian doctoral student at Texas A&M University, plays a vital role in researching how ACP can elevate the quality and safety of grains. This groundbreaking technology employs a high-voltage electric discharge to generate active particles that modify the molecular structure of grains. The benefits are manifold: it enhances seed germination, reduces toxic heavy metal uptake, minimizes chemical use in flour processing, and improves dough properties and overall product quality.
Mahanta’s research, conducted at the Wheat Marketing Center in Portland, demonstrates that ACP is a valuable alternative to chlorine in wheat flour processing—eliminating associated health risks and maintaining high product standards. Her groundbreaking work was acknowledged at notable platforms such as the ASABE and IFT-FIRST conferences in 2024, gaining acclaim for its innovative approach to decreasing chemical treatments in wheat.
In recognition of her efforts, Mahanta earned first place internationally in the Bioprocess Startup Competition for her project, “Force Plasma: Alternative to Chemical Fumigation,” at the ASABE 2024 Annual International Meeting. Through an internship at the Food and Agriculture Organization in Rome, she further contributed to shaping global food security policies.
Mahanta affirms, “Every scientific discovery holds the potential for positive change.
