Discover the Irresistible Delight: Why JSan is Goa’s Ultimate Haven for Ramen Lovers!

Ramen may not win any beauty contests, but it embodies a chaotic charm that invites slurping and savoring. Each bowl represents an alchemy of flavors, a dedication that has garnered a devoted following worldwide. At the forefront of this culinary movement is Chef Vishesh Jawarani, founder of JSan, an Izakaya gastro pub that opened in Goa earlier this year. With a rich culinary background, including a Michelin star from New York, Vishesh’s passion for Japanese cuisine shines at this ramen haven.

“Ramen is a beautiful paradox; it looks simple but is incredibly complex,” Vishesh explains. His culinary creations are the result of extensive research and experimentation, with a focus on balance. Eschewing conventional sushi and sashimi, he emphasizes elegantly presented small dishes that serve as an alluring introduction to the star of the show: his meticulously crafted ramen.

JSan immerses diners in a Japanese-inspired ambiance, designed by Vishesh’s father, architect Somesh Jawarani. The restaurant embodies the concept of yūgen, or grace, interwoven with wabi-sabi, which celebrates the beauty of imperfection. Guests are greeted by striking flaming-orange torii gates, offering a visual escape from the vibrant chaos of Anjuna, which has evolved from a bohemian past to a cultured hub.

Vishesh incorporates Kintsugi-inspired flooring, where broken tiles are harmoniously mended, reflecting his belief that simplicity has intrinsic value. “Wabi-sabi reminds us to slow down and appreciate the transient,” he notes. Murmuring water features and lush gardens create a serene atmosphere, complemented by playful decor like a wall adorned with painted, leaping monkeys. Each element within JSan tells a story of craftsmanship, with brick molds from Vishesh’s great-grandfather’s brick mill adding historical depth.

JSan’s ramen options are diverse, showcasing three distinctive noodle types designed to enhance their respective broths. From the rich tonkotsu to the milk-white tori paitan, Vishesh balances tradition and innovation. The tonkotsu broth is labor-intensive, simmered for two days using the age-old yobimodoshi technique, yielding a silky finish. In contrast, the tori paitan features a medley of chicken parts simmered for 12 hours to maximize flavor.

While the ramen steals the spotlight, starters like tuna tartare and sea bass ceviche tantalize the palate. A mushroom chawanmushi, a delicate silken egg custard, adds to the culinary experience, making the absence of sushi feel inconsequential.

Desserts aren’t to be overlooked. The Honey Butter Shokupan, a fluffy bread topped with Madagascar vanilla bean ice cream, embodies a sweet and satisfying conclusion to the meal.

JSan’s beverage menu, crafted by mixologists Nitin Tewari and Suyash Pande, features fresh, palate-cleansing cocktails that merge Japanese ingredients with Indian botanicals. Special attention is given to zero-proof options, reflecting a mindful approach to mixology. The Sakura and Umeshu cocktail, refreshing with a tartness, stood out as a favorite.

Vishesh’s culinary journey was a path of rediscovery. Armed with business degrees, he shifted to the Culinary Institute of America, honing his skills at renowned Michelin-starred restaurants like Daniel and Mari. His experience mirrors that of culinary characters like Carmy from “The Bear,” marked by focus and a drive fueled by his Sindhi heritage.

Under his guidance, and supported by his sous chef Swamini Mandlik-who brings her own Michelin experience from Le Pavillon in New York-JSan promises a dining experience that skillfully blends flavors and aesthetics. Vishesh’s love for Japan deepened after immersing himself in its food culture, appreciating the craftsmanship and reverence for seasonality.

JSan, located next to Cliff’s Monty Guesthouse in Anjuna, is open Monday, Wednesday, and Thursday, from 5 PM to 11 PM, and Friday through Sunday, from 12 PM to 3 PM and 7 PM to 11 PM. A meal for two averages ₹3,500, making it an affordable yet exquisite culinary expedition for ramen aficionados.
