Shocking Truth: How Ultra-Processed Fried Foods Fuel Chronic Inflammation and Trigger Type 2 Diabetes
A groundbreaking study conducted by the Madras Diabetes Research Foundation, an ICMR Centre for Advanced Research in Diabetes, has highlighted the adverse health impacts of ultra-processed and fried foods in India. Published in the International Journal of Food Sciences and Nutrition, the research reveals that these foods, rich in Advanced Glycation End-products (AGEs), contribute to chronic inflammation, insulin resistance, and type 2 diabetes. The study, funded by the Department of Biotechnology, advocates for low-AGE diets as a strategy to mitigate diabetes risk.
AGEs are compounds formed both in the blood and through dietary choices. Foods high in AGEs include red meat, french fries, sugary foods, and fried goods, while low-AGE foods encompass green leafy vegetables, fruits, fish, and boiled items. The research emphasizes that cooking methods like frying, roasting, and grilling exacerbate AGE levels, whereas boiling helps control them.
Involving 38 overweight and obese adults aged 25-45, the study monitored participants over several months. It found that those adhering to a low-AGE diet experienced lower glucose levels and reduced inflammatory markers. In contrast, participants consuming high-AGE foods showed elevated glucose levels, increased insulin resistance, and more significant inflammation.
The study points to the rapid nutrition transition in developing countries like India, characterized by high intake of refined carbohydrates, fats, and animal products, coupled with sedentary lifestyles, as culprits in rising obesity and diabetes rates. India currently faces a staggering 101 million diabetes cases, with obesity prevalence at 40%. Obesity is intricately linked to insulin resistance and oxidative stress, promoting non-communicable diseases like type 2 diabetes. The findings underscore the urgent need to shift dietary habits to combat the growing diabetes epidemic driven by unhealthy, AGE-rich diets, coupled with physical inactivity.
